- Prepare the Pico De Gallo and set aside.
- Prepare the Guacamole; cover tightly with plastic wrap and set aside.
- Heat the olive oil in a skillet over medium heat.
- Place a tortilla in the skillet and spread half of the goat cheese evenly over one half of the tortilla.
- Add a layer of pico de gallo and dollops of guacamole on top of the cheese.
- Sprinkle minced shallots, garlic, cilantro, cumin, chili powder, salt, and white pepper over the fillings.
- Fold the tortilla in half to enclose the fillings.
- Cook until the tortilla is golden brown and crispy, about 3-4 minutes, then flip and cook the other side for another 3-4 minutes.
- Remove from the skillet, cut into wedges, and serve warm.
