Ingredients

  • 2 c. Pico De Gallo
  • 1 c. Guacamole
  • 1/2 lb. soft goat cheese
  • 2 tsp. minced shallots
  • 1/2 tsp. minced garlic
  • 1 Tbsp. chopped fresh cilantro
  • 1/2 tsp. ground cumin
  • 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/2 tsp. white pepper
  • 1 Tbsp. olive oil

Instructions

  1. Prepare the Pico De Gallo and set aside.
  2. Prepare the Guacamole; cover tightly with plastic wrap and set aside.
  3. Heat the olive oil in a skillet over medium heat.
  4. Place a tortilla in the skillet and spread half of the goat cheese evenly over one half of the tortilla.
  5. Add a layer of pico de gallo and dollops of guacamole on top of the cheese.
  6. Sprinkle minced shallots, garlic, cilantro, cumin, chili powder, salt, and white pepper over the fillings.
  7. Fold the tortilla in half to enclose the fillings.
  8. Cook until the tortilla is golden brown and crispy, about 3-4 minutes, then flip and cook the other side for another 3-4 minutes.
  9. Remove from the skillet, cut into wedges, and serve warm.
