Golden Gingerbread
Ingredients
- 1 c. whole wheat flour ⓘ
- 1 c. unbleached flour ⓘ
- 2 tsp. ground ginger ⓘ
- 1 tsp. baking soda ⓘ
- 1 tsp. baking powder ⓘ
- 1 tsp. ground cinnamon ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 c. margarine, softened ⓘ
- 3/4 c. firmly packed brown sugar ⓘ
- 1/4 c. applesauce ⓘ
- 3 egg whites ⓘ
- 1 c. buttermilk ⓘ
- 1 c. golden raisins (optional) ⓘ
Instructions
- Preheat oven to 350°.
- Spray 9 x 9-inch baking pan with vegetable cooking spray.
- In small bowl, combine flours and next 5 ingredients.
- In large bowl, with mixer at high speed, beat margarine, sugar and applesauce until smooth.
- Add egg whites and buttermilk; beat well.
- Turn mixer to low speed and beat in flour mixture.
- (Fold in raisins if using.)
- Pour into pan.
- Bake about 30 minutes or until toothpick inserted in center comes out clean.
