Ingredients

  • 1/4 cup shortening
  • 3/4 cup brown sugar
  • 1 egg
  • 2 cups sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 1/3 cup frozen orange concentrate, thawed
  • 1/2 cup chopped nuts
  • 1 cup crushed pineapple with juice (8 1/2 oz.) can

Instructions

  1. Cream together shortening and brown sugar.
  2. Beat in egg well.
  3. Sift together all-purpose flour, salt, and soda.
  4. Add the dry ingredients alternately with the undiluted orange concentrate to the creamed mixture, stirring after each addition.
  5. Quickly stir in chopped nuts and crushed pineapple with juice.
  6. Pour batter into a greased small loaf pan (approximately 9 x 5 x 3 inches).
  7. Bake in a preheated oven at 350°F (175°C) for 50 to 60 minutes.
  8. Remove from oven and empty onto a rack to cool.
