Ingredients

  • 8 flour tortillas
  • 1 (10 3/4 oz.) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup chopped green onions
  • 1/4 cup chopped green chilies
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 cup grated Cheddar cheese
  • 1 1/2 cups cooked chopped turkey or chicken breast

Instructions

  1. Combine soup, sour cream, chilies, and salt. Reserve 3/4 cup sauce and mix the rest with the turkey or chicken and 1/2 cup cheese.
  2. Slightly fry the tortillas in heated vegetable oil, one at a time. Fill each tortilla with the meat mixture while still hot.
  3. Roll up the tortillas and place seam side down in a 9 x 13-inch baking dish.
  4. Combine the reserved sauce with milk and pour over the rolled tortillas.
  5. Bake, covered, at 350°F for 30 minutes. Remove from oven and sprinkle with remaining cheese and chopped green onions while hot.

Tips & Substitutions

For extra flavor, consider adding spices like cumin or chili powder to the meat mixture. If you don’t have sour cream, plain Greek yogurt is a great substitute. You can also swap out the turkey for shredded rotisserie chicken to save time. For a bit of heat, try using spicy green chilies.

Serving Suggestions

These Golden Turkey Enchiladas pair beautifully with a side of Mexican rice or a fresh green salad. For added freshness, serve with sliced avocado or a dollop of guacamole. A drizzle of sour cream on top can enhance the dish, and for a complete meal, consider serving them alongside Texas Style Tortilla Soup.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the enchiladas in a baking dish covered with foil and warm them in a preheated oven at 350°F for about 20 minutes, or until heated through. You can also microwave individual servings.
