Ingredients

  • 1 cup yellow cornmeal
  • 1 cup milk
  • 1 can cream corn
  • 3/4 teaspoon baking soda
  • 1 pound ground beef
  • 1 onion, sliced
  • Jalapeno peppers (optional)
  • 2 cups shredded cheddar cheese

Instructions

  1. In an iron skillet, put two teaspoons of bacon drippings and sprinkle a little cornmeal in it.
  2. Let the skillet get hot.
  3. Mix cornmeal, milk, cream corn, and baking soda in a bowl.
  4. Pour half of the mixture into the skillet.
  5. Top that mixture with ground beef.
  6. Slice the onion and place it over the beef.
  7. Add jalapeno peppers to taste.
  8. Sprinkle 2 cups of shredded cheddar cheese on top.
  9. Pour the remaining batter over the cheese and beef mixture.
  10. Bake about 1 hour at 350 degrees Fahrenheit.
