Ingredients

  • 6 slices bacon, cut into 1-inch pieces
  • 2 cups cubed red potatoes
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 cups milk
  • 8 oz. can oysters, drained and rinsed
  • 6 1/2 oz. can clams, drained and rinsed
  • 2 teaspoons basil leaves
  • 1/8 teaspoon cayenne pepper

Instructions

  1. In a 3-quart saucepan, cook bacon over medium heat for 5 minutes.
  2. Add cubed red potatoes, chopped onion, and chopped celery to the pan.
  3. Continue cooking, stirring occasionally, until potatoes are tender, about 15 to 20 minutes.
  4. Remove the bacon and vegetables from the pan and set aside.
  5. In the same pan, melt butter over medium heat.
  6. Stir in flour and cook for 1-2 minutes to make a roux.
  7. Gradually add milk, stirring constantly until the mixture thickens.
  8. Add drained oysters and clams, basil leaves, and cayenne pepper to the sauce.
  9. Return the cooked bacon and vegetables to the pan, stirring to combine.
  10. Simmer for a few minutes to heat through. Garnish with chopped fresh parsley before serving.
