Ingredients

  • 6 strips bacon
  • 1 cup chopped onion
  • 2.5 pounds cubed potatoes
  • 1 cup sliced celery
  • 0.5 cup sliced carrots
  • 3 cups water
  • 1.5 teaspoons salt
  • 2 cups milk
  • 2 cups light cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • Shredded Cheddar cheese

Instructions

  1. Cook bacon and chopped onion in a 4-quart Dutch oven, then drain and set aside on paper towels.
  2. Place cubed potatoes, sliced celery, sliced carrots, water, and salt in the Dutch oven.
  3. Cover and bring to a boil over high heat, about 5 minutes.
  4. Reduce heat to low and simmer for 15 minutes until vegetables are tender.
  5. Drain the vegetable mixture in a colander.
  6. Puree half of the cooked potatoes in a blender until smooth.
  7. Return the pureed potatoes and remaining potato mixture to the Dutch oven.
  8. Add the cooked bacon and onions back into the pot.
  9. Stir in milk, light cream, salt, and pepper.
  10. Cover and cook over medium heat for about 15 minutes, stirring occasionally. Do not boil.
  11. Serve in bowls, sprinkled with shredded Cheddar cheese and parsley.
