Good Potato Soup

- Cook bacon and chopped onion in a 4-quart Dutch oven, then drain and set aside on paper towels.
- Place cubed potatoes, sliced celery, sliced carrots, water, and salt in the Dutch oven.
- Cover and bring to a boil over high heat, about 5 minutes.
- Reduce heat to low and simmer for 15 minutes until vegetables are tender.
- Drain the vegetable mixture in a colander.
- Puree half of the cooked potatoes in a blender until smooth.
- Return the pureed potatoes and remaining potato mixture to the Dutch oven.
- Add the cooked bacon and onions back into the pot.
- Stir in milk, light cream, salt, and pepper.
- Cover and cook over medium heat for about 15 minutes, stirring occasionally. Do not boil.
- Serve in bowls, sprinkled with shredded Cheddar cheese and parsley.
