Ingredients

  • 1/4 cup margarine
  • 3/4 cup flour
  • 1/2 cup milk
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1 cup washed and stemmed gooseberries
  • 1 cup sugar

Instructions

  1. Cream the margarine and 1/3 cup sugar together until well combined.
  2. Add the baking powder and flour to the creamed mixture and mix well.
  3. Pour in the milk and stir until the batter is smooth.
  4. Spread the batter in a greased 8-inch pie pan.
  5. Arrange the washed and stemmed gooseberries evenly over the batter.
  6. Sprinkle 1 cup sugar over the berries, dot with small pieces of margarine, and pour boiling water over all.
  7. Bake in a preheated oven at 375°F (190°C) for 30 to 40 minutes until lightly browned.
