Ingredients

  • 1 large onion, chopped
  • 1 clove garlic, mashed
  • 1 stick butter or margarine
  • 1/2 lb. mushrooms, sliced
  • 4 medium zucchini, sliced
  • 1 (3 oz.) jar chopped pimento
  • 1/2 lb. Gouda cheese, sliced thin

Instructions

  1. Saute chopped onion and mashed garlic in butter in a large skillet.
  2. Add sliced mushrooms and cook until tender. Season with salt and pepper to taste.
  3. Lay sliced zucchini on top of the mushroom mixture in the skillet.
  4. Add chopped pimento evenly over the zucchini.
  5. Cover the skillet and cook over low heat for 15 to 20 minutes until zucchini is tender.
  6. Lay thin slices of Gouda cheese over the top of the zucchini.
  7. Cover the skillet until the cheese melts.
