Ingredients

  • 4 acorn squash
  • 4 strips bacon
  • 1 cup minced onion
  • 3 ribs celery
  • 1 green pepper
  • 1/2 cup tomato sauce or ketchup
  • salt
  • butter
  • 1/2 cup bread crumbs

Instructions

  1. Cut the acorn squash in halves and remove the seeds and membranes.
  2. Arrange the squash halves on a buttered baking sheet.
  3. Fry the bacon until crisp, then drain on paper towels and crumble.
  4. In the bacon fat, sauté the minced onion, chopped celery, and chopped green pepper until tender.
  5. Stir in the tomato sauce or ketchup.
  6. Sprinkle the squash halves with salt and dot with butter.
  7. Put a tablespoon of the vegetable mixture into each squash cavity and sprinkle with bread crumbs.
  8. Bake at 350°F for 30 minutes or until tender when pierced with a fork.
  9. Sprinkle crumbled bacon on top before serving.
