Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 2 tablespoons bacon drippings
  • 1 egg

Instructions

  1. Mix the cornmeal, flour, salt, sugar, and baking powder until smooth.
  2. Add the beaten egg and bacon drippings, and mix well.
  3. Drop spoonfuls of the batter onto a hot, lightly greased griddle or iron skillet.
  4. Brown on one side, then turn over and brown the other side.
  5. Serve hot with butter.
