Ingredients

  • 1 lb ground hamburger or ground turkey
  • 1 large can beef or chicken broth
  • 1 envelope onion soup mix
  • 1 large can Italian tomato sauce
  • 1 large package frozen mixed vegetables (corn, peas, carrots, lima beans)
  • 1¾ cups uncooked macaroni for soup
  • 3 beef or chicken bouillon cubes

Instructions

  1. Brown the ground meat (hamburger or ground turkey) in an 8-quart kettle.
  2. Drain off any excess fat from the meat.
  3. Add beef or chicken broth, onion soup mix, and Italian tomato sauce to the kettle.
  4. Bring the mixture to a boil.
  5. Add the frozen mixed vegetables to the boiling soup.
  6. Reduce the heat and cook on low for 30 minutes.
  7. Cook the macaroni separately until al dente.
  8. Add the cooked macaroni to the soup and stir to combine.
  9. Serve hot; yields 8 to 10 servings. Can be frozen for later.
