  • 1 1/2 lb. beef chuck roast
  • 1 1/2 lb. pork shoulder
  • 1 large onion
  • 3 large garlic cloves
  • 3 cups beer or water
  • 1 cup Special Tomatoes
  • 1 (8 oz.) can tomato sauce
  • 1/2 cup chili powder
  • 1 Tbsp. salt
  • 1 Tbsp. cumin
  • 1 1/2 tsp. paprika
  • 2 Tbsp. instant masa mix
  • 3 Tbsp. warm water
  • 1 (4 to 5 lb.) duckling
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. white pepper
  • 1/8 tsp. ground cloves
  • 3 Tbsp. soy sauce
  • 5 green onions
  • 1 Tbsp. honey

Instructions

  1. Rinse the duck inside and out and pat dry; cut off the tail and discard.
  2. Reserve the giblets for other uses.
  3. Mix together ground ginger, cinnamon, nutmeg, white pepper, and ground cloves.
  4. Sprinkle 1/2 teaspoon of the spice mixture inside the duck cavity.
  5. Stir 1 tablespoon of soy sauce into the remaining spice mixture, then rub evenly over the exterior of the duck.
  6. Cut one green onion in half and tuck inside the duck cavity.
  7. Cover and refrigerate the duck for 2 hours or until next day.
