Granny's Lindberg Special is a tangy, sweet and savory vegetable relish featuring carrots, peppers, and cabbage, perfect as a condiment or side for a variety of dishes.

Ingredients

  • 8 carrots
  • 8 peppers (4 red and 4 green)
  • 2 medium heads cabbage
  • 2 onions
  • 1/2 cup salt
  • 2 teaspoons mustard
  • 2 teaspoons celery seed
  • 1 quart vinegar
  • 5 cups sugar

Instructions

  1. Grind the carrots, peppers, cabbage, and onions.
  2. Mix the ground vegetables together well.
  3. Add salt and cover with water.
  4. Let stand for three hours.
  5. Drain the vegetables well.
  6. Add vinegar, sugar, mustard, and celery seed to the mixture.
  7. Mix well and put into jars.
  8. Process jars as for pickles.
