Ingredients

  • 20 to 25 (4-inch) cucumbers
  • 1/8 teaspoon powdered alum
  • 1 clove garlic
  • 2 heads dill
  • 1 very hot pepper
  • 1 quart white vinegar
  • 1 cup canning salt
  • 3 quarts water
  • 1 grape leaf
  • onion (optional)

Instructions

  1. Wash the cucumbers thoroughly.
  2. Let the cucumbers stand in cold water overnight.
  3. Pack the cucumbers into hot sterilized jars.
  4. Add 1/8 teaspoon powdered alum, 1 clove garlic, 2 heads dill, and 1 hot pepper to each jar.
  5. Combine 1 quart white vinegar, 1 cup canning salt, and 3 quarts water; bring to a boil.
  6. Fill each jar with the hot vinegar mixture, placing a grape leaf in each jar.
  7. Seal the jars tightly. Optionally, add sliced onion before sealing.
