Ingredients

  • 2/3 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract (optional)
  • 1 1/2 cups Grape-Nuts
  • 3/4 cup coconut

Instructions

  1. Mix all ingredients by hand, including flour, baking powder, salt, butter, sugars, egg, vanilla, almond extract (if using), Grape-Nuts, and coconut.
  2. Drop spoonfuls of the mixture onto an ungreased baking sheet.
  3. Flatten each cookie slightly with a knife dipped in water.
  4. Bake at 350°F for 12 minutes.
  5. Remove from oven and transfer cookies while still warm.
