Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup unbleached white flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 egg white
  • 1 whole egg
  • 3/8 cup vegetable oil
  • 1 1/4 cups finely grated unpeeled zucchini
  • 1 teaspoon vanilla
  • 1/2 cup finely chopped nuts

Instructions

  1. In a large bowl, combine the whole wheat flour, unbleached white flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ground cloves.
  2. In a medium bowl, mix together the egg white, whole egg, vegetable oil, grated zucchini, and vanilla.
  3. Add the egg mixture to the flour mixture, stirring until well combined.
  4. Stir in the chopped nuts, if using.
  5. Pour the batter into a greased 9 x 5 x 3-inch loaf pan.
  6. Bake in a preheated 350°F (175°C) oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
