Instructions
- In a large bowl, combine the whole wheat flour, unbleached white flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ground cloves.
- In a medium bowl, mix together the egg white, whole egg, vegetable oil, grated zucchini, and vanilla.
- Add the egg mixture to the flour mixture, stirring until well combined.
- Stir in the chopped nuts, if using.
- Pour the batter into a greased 9 x 5 x 3-inch loaf pan.
- Bake in a preheated 350°F (175°C) oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
