Ingredients

  • 1 cup raisins
  • 1/4 cup water
  • 3 eggs
  • 3/4 cup sugar
  • 1 cup oil
  • 2 1/2 cups grated raw pumpkin
  • 1 teaspoon vanilla
  • 2 3/4 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon mace
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  1. Cover raisins with water to plump them.
  2. Beat eggs thoroughly and mix in sugar, oil, pumpkin, and vanilla.
  3. Sift together the flour, cinnamon, mace, salt, baking powder, and baking soda.
  4. Gradually mix the dry ingredients into the pumpkin mixture, beating well.
  5. Drain raisins and stir them into the batter.
  6. Pour the batter into a greased and floured 9 x 5-inch loaf pan.
  7. Bake in a preheated 350°F oven for 1 to 1 1/4 hours or until a toothpick inserted into the center comes out clean.
  8. Cool on a rack for 15 minutes before turning out of the pan.
