Holiday Eggs is a hearty, cheesy baked casserole with green peppers, onions, mushrooms, and rich cheese layers, perfect for festive brunches or family gatherings.

Ingredients

  • 16 slices Italian bread
  • 1/2 lb grated Monterey Jack cheese
  • 1/2 lb grated Colby cheese
  • 1/2 lb grated sharp Cheddar cheese
  • 1 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1 large jar drained mushrooms
  • 6 eggs
  • 3 cups milk
  • 1/4-1/2 teaspoon ground mustard
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Sauté green pepper and onion.
  2. Remove crusts from bread; butter both sides.
  3. Line a 9x13 inch pan with 8 slices of bread.
  4. Mix grated cheeses, green pepper, onion, and drained mushrooms; spread half of this mixture over the bread in the pan.
  5. Layer with remaining 8 slices of bread and cover with the remaining cheese mixture.
  6. In a bowl, whisk together eggs, milk, ground mustard, Worcestershire sauce, salt, and pepper.
  7. Pour the egg mixture evenly over the bread and cheese layers.
  8. Refrigerate overnight.
  9. Bake, covered, at 350°F for 1 hour.
