Great Potato Rolls

Ingredients

  • 1 cup milk
  • 1 stick margarine
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 cup potato flakes
  • 1/2 cup cold water
  • 2 eggs
  • 2 packages dry yeast
  • 1/4 cup lukewarm water
  • 1/4 c. sugar

Instructions

  1. Dissolve yeast and 1/4 cup sugar in 1/4 cup lukewarm water. Stir well.
  2. Scald milk and add margarine to melt.
  3. Stir in 1/4 cup sugar and 1 teaspoon salt.
  4. While hot, add potato flakes.
  5. Stir well, then add 1/2 cup cold water and beaten eggs.
  6. When milk mixture is lukewarm, add yeast mixture.
  7. Stir in flour until dough is fairly stiff.
  8. Cover and let rise until double in size, about 1 hour.
  9. Knead dough on floured surface.
  10. Roll out to about 1/2-inch thick and cut with cutter.
  11. Let rise until double in size, about 1 hour.
  12. Bake at 450°F for about 10 to 12 minutes.
