- Meanwhile, in a saucepan, melt the butter (oleo), then whisk in the flour and 1 teaspoon of salt.
- Cook for 1 minute, then gradually stir in the milk and shredded cheese.
- Cook until the cheese is melted and the mixture has thickened.
- Fold in cooked ham (if using).
- Stir the cheese mixture into the vegetables and broth.
- Simmer until ready to serve.
