Ingredients

  • 4 cups cubed potatoes
  • 4 cups water
  • 1 cup thinly sliced carrots
  • 1 cup finely chopped celery
  • 1/2 cup diced onions
  • 1 teaspoon salt
  • 1/2 cup oleo (butter)
  • 1/2 cup flour
  • 2 cups milk
  • 1/2 cup shredded cheddar or colby cheese
  • Optional: cooked ham
  • 1/2 c. shredded cheddar or colby cheese

Instructions

  1. In a Dutch oven or soup kettle, combine the cubed potatoes, water, sliced carrots, chopped celery, chopped onions, and 1 teaspoon of salt.
  2. Bring to a boil, then reduce heat and simmer until the vegetables are tender.
  3. Meanwhile, in a saucepan, melt the butter (oleo), then whisk in the flour and 1 teaspoon of salt.
  4. Cook for 1 minute, then gradually stir in the milk and shredded cheese.
  5. Cook until the cheese is melted and the mixture has thickened.
  6. Fold in cooked ham (if using).
  7. Stir the cheese mixture into the vegetables and broth.
  8. Simmer until ready to serve.
