  • 4 oz. crumbled Feta cheese, rinsed

  • 1/2 cup parsley, finely chopped
  • salt to taste

Instructions

  1. Cook frozen spinach on high until barely defrosted.
  2. Drain in colander, pressing out moisture.
  3. In a mixing bowl, combine spinach, Parmesan, Feta, green onions, parsley, and salt to taste.
  4. Mix well.
  5. Mound the spinach mixture high into mushroom caps.
  6. Arrange on a serving plate and cook on high until steaming, approximately 3 to 4 minutes.
