  • 2 medium onions, one diced fine, one sliced
  • 8 ounces spinach, washed and stemmed
  • 3/4 cup bread crumbs
  • 6 eggs, hard boiled
  • 3 Tbsp. cream
  • 1 medium carrot, diced
  • 1/2 cup wine
  • 1/2 cup water
  • 1/2 cup water

Instructions

  1. Remove 6 large outer leaves from the cabbage and blanch in boiling water until tender, about 3-6 minutes.

  4. Cook the rice uncovered in a good amount of water until tender, then drain and reserve.
  5. Heat 1 1/2 tablespoons of butter in a saute pan.
  6. Add the chopped onion and cook covered until tender but not browned.

  8. In a large bowl, combine the cooked rice, cream, and bread crumbs.
  9. Mix in the spinach mixture and let cool.

Tips & Substitutions

For easier rolling, ensure the cabbage leaves are well-blanched and pliable. If you don't have savoy cabbage, green cabbage can work as a substitute, though the texture may differ slightly. You can enhance the filling with herbs like dill or parsley for added flavor, or use quinoa instead of rice for a gluten-free option.

Serving Suggestions

Serve the stuffed cabbage leaves with a dollop of sour cream or yogurt for a creamy contrast. They pair beautifully with a side of Mediterranean recipes like Tabouli(Greek Salad) or a light cucumber salad. A glass of white wine complements the flavors well, making it a delightful meal for gatherings or family dinners.

Storage & Reheating

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the stuffed cabbage in a baking dish, cover with foil, and warm in a preheated oven at 350°F for about 20 minutes, or until heated through. You can also microwave individual portions for quicker reheating.

Frequently Asked Questions

Can I make stuffed cabbage in advance?

Yes, you can prepare the stuffed cabbage leaves ahead of time. Assemble them and store in the refrigerator for up to 24 hours before baking. This allows the flavors to meld together. Just add a few extra minutes to the baking time if they are cold from the fridge.

What can I use if I don't have breadcrumbs?

If you don't have breadcrumbs, you can use crushed crackers or oats as a substitute. Both options will help bind the filling together. For a gluten-free version, consider using gluten-free breadcrumbs or ground nuts, which will add a nice texture as well.

How can I make this dish vegetarian?

This recipe is already vegetarian-friendly, but you can enhance it by adding more vegetables to the filling, such as mushrooms or bell peppers. You can also incorporate plant-based proteins like lentils or chickpeas for added nutrition and heartiness.
