Instructions
- Soak the dried small white beans, then drain and rinse them.
- Add 6 cups of fresh water, cover, and simmer for about 1 hour or until the beans are nearly tender.
- Drain the beans.
- In a Dutch oven or heavy kettle, sauté chopped onions in olive oil until translucent.
- Add the lamb cubes and brown on all sides.
- Add the drained beans, 1 1/4 cups of water, salt, oregano, pepper, and bay leaf. Cover and simmer for 45 minutes.
