Ingredients

  • 1 1/2 c. green beans (1-inch pieces)
  • 2 medium carrots, cut in 1/4-inch slices
  • 1 medium onion, cut into 1/4-inch slices
  • 4 oz. mushrooms, cut into 1/4-inch slices
  • 1/4 c. margarine
  • 1 tsp. salt

Instructions

  1. Heat 1 inch of water to boiling in a medium saucepan.
  2. Add green beans and carrots.
  3. Return to boiling.
  4. Reduce heat and simmer, covered, until almost tender, about 12 minutes.
  5. Drain the vegetables.
  6. In a 10-inch skillet, cook and stir onion and mushrooms in margarine over medium heat until almost tender, about 5 minutes.
  7. Reduce heat to low.
  8. Stir in the drained beans, carrots, and salt.
  9. Cook, covered, over medium heat until tender.
