  • 1 cup chopped onion
  • 4 (15 ounce) cans white hominy
  • 1/2 cup hominy liquid
  • 1 tablespoon juice from pickled jalapenos
  • 1/2 pound Cheddar cheese
  • 10 slices bacon
  • 1 can chopped green chilies

Instructions

  1. Saute the chopped onion in a little of the bacon drippings and set aside.
  2. Heat the drained hominy in a saute pan, stirring often.
  3. When the hominy is heated thoroughly, add the reserved hominy liquid and jalapeno juice, bring to a high temperature, then add three-quarters of the grated cheese.
  4. When the cheese melts, add half the chopped green chilies, bacon, and all the cooked onions.
  5. Pour the mixture into a 9 x 13-inch baking pan.
  6. Sprinkle the remaining cheese, bacon, chilies, and peppers on top.
  7. Bake at 325°F for about 15 minutes until the cheese on top melts, or 40 minutes if refrigerated beforehand.
