Ingredients

  • 3 whole eggs
  • 3/4 cup skim milk
  • 1 teaspoon chili powder
  • 1 (4 oz.) can chopped green chilies
  • 1/2 teaspoon cream of tartar
  • 2 egg whites
  • 1/4 cup all-purpose flour
  • 4 oz. shredded Jack cheese
  • 1/2 cup finely chopped ham

Instructions

  1. Preheat oven to 350°F.
  2. Coat the inside of a 2 1/2-quart souffle dish with nonstick vegetable oil cooking spray.
  3. Separate the eggs, placing yolks in a small bowl and whites in a large bowl.
  4. Let the egg whites come to room temperature.
  5. Place milk, flour, and chili powder in a 2-cup jar with a tight-fitting lid; shake until smooth.
  6. Pour the mixture into a medium-sized saucepan.
  7. Cook over medium heat, stirring constantly, until the mixture thickens and boils.
  8. Remove from heat and mix in the shredded Jack cheese until melted.
  9. Stir in chopped green chilies, chopped ham, and egg yolks.
