Tex-Mex Souffle

- Preheat oven to 350°F.
- Coat the inside of a 2 1/2-quart souffle dish with nonstick vegetable oil cooking spray.
- Separate the eggs, placing yolks in a small bowl and whites in a large bowl.
- Let the egg whites come to room temperature.
- Place milk, flour, and chili powder in a 2-cup jar with a tight-fitting lid; shake until smooth.
- Pour the mixture into a medium-sized saucepan.
- Cook over medium heat, stirring constantly, until the mixture thickens and boils.
- Remove from heat and mix in the shredded Jack cheese until melted.
- Stir in chopped green chilies, chopped ham, and egg yolks.
