Ingredients

  • 2-1/2 cups Old Fashioned Oats
  • 1/2 cups Brown Sugar
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Cocoa
  • 2 cups Spinach
  • 1/4 cups Almond Milk
  • 1 Tablespoon Peanut Butter
  • 1 whole Banana, Mashed
  • 1 cup Unsweetened Applesauce
  • 1 teaspoon Vanilla
  • 1 whole Egg
  • 1/3 cups Egg Whites

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl combine all dry ingredients. Stir together.
  3. Meanwhile, add spinach, almond milk, and peanut butter into a food processor. Pulse until everything is combined and smooth.
  4. Add spinach mixture into dry ingredients. Add remaining ingredients and stir together.
  5. Spoon batter into a greased muffin tin. Bake for 25 minutes.
  6. Yields 12 muffins.
