Ingredients

  • 2 medium green peppers
  • 3 slices bacon, chopped
  • 1/2 cup shredded carrot
  • 1/4 cup chopped onion
  • 1 cup corn bread stuffing mix
  • 3 tablespoons water
  • 1/4 cup shredded Swiss cheese

Instructions

  1. Cut a thin slice from the top of each green pepper.
  2. Cut each pepper in half lengthwise and remove the seeds.
  3. In a saucepan, cook the pepper halves in boiling salted water for 5 minutes.
  4. Invert the peppers and drain them on paper towels.
