Ingredients

  • 1 cup Cheddar cheese
  • 1 1/2 lb ground beef
  • 3/4 cup onion
  • 3/4 cup green pepper
  • 1 can green enchilada sauce (10 oz)
  • 1 can red enchilada sauce (10 oz)
  • 1 can tomato sauce (8 oz)
  • 1 1/3 cup Milnot evaporated milk
  • 12 tortillas
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Brown ground beef in a skillet, then add onion, green pepper, salt, and pepper. Cook until tender and drain excess fat.
  2. Mix in green and red enchilada sauces, tomato sauce, and evaporated milk to create the sauce mixture.
  3. Layer tortillas, meat mixture, cheese, and sauce mixture in a baking dish, repeating the layers three times.
  4. Bake at 350°F for about 1 hour until hot and bubbly.
  5. Serve with a tossed green salad for a complete meal.
