Ingredients

  • 1 cup butter
  • 2 cups sugar
  • 4 eggs
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 2 cups pecans
  • 2 cups shredded coconut
  • 1 pound mixed gumdrops (no licorice)
  • 1 teaspoon vanilla

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Combine all-purpose flour, soda, and salt in a bowl.
  4. Add the dry ingredients to the creamed mixture alternately with buttermilk, beginning and ending with the dry ingredients.
  5. Fold in chopped pecans, coconut, and chopped gumdrops.
  6. If gumdrops are sticky, roll them in about 4 tablespoons of flour before folding in.
  7. Add vanilla extract and mix well.
  8. Spoon the batter into two well-greased 9 x 5 x 2-inch loaf pans.
  9. Bake at 300°F (150°C) for about 1 1/2 hours or until a toothpick inserted into the center comes out clean.
