Ingredients

  • 1 lb. pitted dates, chopped
  • 1 lb. gumdrop orange slices, chopped
  • 1/2 cup candied cherries
  • 2 cups nuts, finely chopped
  • 1 cup coconut
  • 4 cups flour
  • 2 cups sugar
  • 5 eggs
  • 3/4 cup margarine
  • 1 teaspoon soda
  • 1 cup buttermilk
  • 1 teaspoon vanilla

Instructions

  1. Chop all fruits, nuts, coconut, and candies.
  2. Mix the chopped fruits, nuts, coconut, and candies in one bowl.
  3. Toss 1/2 cup of flour with the fruit mixture to coat.
  4. Cream the margarine and sugar together.
  5. Add eggs one at a time and beat well.
  6. Sift the soda with the remaining flour.
  7. Alternately add the flour mixture and buttermilk to the creamed mixture, starting and ending with the flour.
  8. Add vanilla extract to the batter and mix well.
  9. Combine the batter with the fruit mixture, folding gently.
  10. Pour the batter into a greased tube pan.
  11. Bake at 300°F (approximately 150°C) for 2 hours or until a toothpick inserted in the center comes out clean.
  12. Remove from the oven, and while still hot, remove from the pan and ice.
