Halibut Chowder
A creamy halibut chowder packed with fresh vegetables and rich flavors, perfect for a comforting family meal or an elegant dinner with a seafood twist.
Ingredients
- 8 green onions, thinly sliced ⓘ
- 2 garlic cloves, minced ⓘ
- 2 Tbsp. butter ⓘ
- 4 (10 oz.) cans cream of potato soup ⓘ
- 2 (10 oz.) cans cream of mushroom soup ⓘ
- 4 c. milk ⓘ
- 2 (8 oz.) pkg. cream cheese, softened
- 1 1/2 lb. halibut fillets, cubed ⓘ
- 1 1/2 c. frozen sliced carrots ⓘ
- 1 1/2 c. frozen corn ⓘ
- 1/8 tsp. cayenne ⓘ
Instructions
- In a soup kettle, sauté green onions and garlic in butter.
- Add cream of potato soup, cream of mushroom soup, milk, and softened cream cheese. Stir until the cream cheese is melted and mixture is smooth.
- Bring the mixture to a boil.
- Stir in cubed halibut fillets, frozen sliced carrots, and frozen corn.
- Reduce heat and simmer uncovered for 5 to 10 minutes.
- Add cayenne pepper and stir well before serving.
