Ingredients

  • 2 Tbsp. butter
  • 1/2 c. sliced fresh mushrooms
  • 1/2 c. chopped green pepper
  • 1/4 c. sliced green onions
  • 6 eggs
  • 2 Tbsp. water
  • 1/2 c. diced, cooked ham

Instructions

  1. In a skillet, melt butter over medium heat.
  2. Saute sliced mushrooms, chopped green pepper, and sliced green onions until tender.
  3. In a bowl, whisk together eggs and water.
  4. Add diced cooked ham to the skillet and cook briefly.
  5. Pour the egg mixture into the skillet over the vegetables and ham.
  6. Cook until eggs are set and lightly browned on top, about 10-15 minutes.
