Ham and cheese stuffed baked potatoes offer a hearty, cheesy filling with savory ham, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 4 large baking potatoes
  • 1 tsp. shortening
  • 6 Tbsp. butter
  • 2 Tbsp. chopped onion
  • 1/4 tsp. pepper
  • 2 eggs
  • 1 1/2 c. shredded Cheddar cheese
  • 1 c. diced ham
  • paprika

Instructions

  1. Scrub potatoes; pat dry.
  2. Rub each potato with shortening and prick several places with a fork.
  3. Bake for 1 hour or until done.
  4. Cut potatoes lengthwise; scoop out the inside, leaving a thin shell.
  5. Mix the scooped-out potato with butter, chopped onion, pepper, eggs, shredded Cheddar cheese, and diced ham.
  6. Stuff the mixture back into the potato shells.
  7. Sprinkle with paprika and bake until heated through and cheese is melted.
