Ingredients

  • 8 oz. uncooked whole wheat or regular fettuccini
  • 2 Tbsp. olive oil
  • 1/2 c. sliced green onions
  • 1/2 c. dairy sour cream
  • 2 Tbsp. skim milk
  • 1/4 c. chopped fresh parsley
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 1/2 c. julienne cut turkey ham or cooked ham
  • 4 eggs, hard-cooked and cut into wedges

Instructions

  1. Cook the fettuccini to desired doneness as directed on the package. Drain and rinse with hot water. Keep warm.
  2. In a large skillet over medium-high heat, heat the olive oil.
  3. Saute the sliced green onions for 1 to 2 minutes or until crisp-tender.
  4. Reduce heat to medium.
  5. Stir in sour cream, milk, chopped parsley, salt, and pepper. Cook, stirring constantly, until hot but not boiling.
  6. Stir in julienne-cut turkey ham or cooked ham and the egg wedges.
  7. Add the cooked fettuccini and toss gently to combine.
