A hearty ham and turkey jambalaya featuring smoky bacon, flavorful tomatoes, and vibrant bell peppers, perfect for a comforting family meal or casual gathering.

Ingredients

  • 1/4 lb. bacon
  • 1 medium onion
  • 1 cup raw rice
  • 1 can whole tomatoes
  • 1 cup chicken broth
  • 1/2 teaspoon thyme
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 1/2 cups cubed cooked turkey
  • 1 1/2 cups cubed lean ham
  • 1 medium red bell pepper
  • 1/4 cup parsley, chopped

Instructions

  1. In a large skillet, cook bacon over medium heat until crisp, about 10 minutes.
  2. Reserve fat in the pan, drain bacon on paper towel, crumble and set aside.
  3. Coarsely chop the onion.
  4. Add onion and rice to the pan and cook, stirring often, for 2 minutes.
  5. Increase heat to medium-high and add tomatoes and their juice, chicken broth, thyme, black pepper, and bay leaf.
  6. Bring mixture to a boil, breaking up the tomatoes with a spoon.
  7. Reduce heat to medium-low, cover the pan, and simmer for 15 minutes.
  8. Cube the cooked turkey and lean ham.
  9. Cut the red bell pepper into thin slivers.
  10. Stir turkey, ham, and bell pepper into the jambalaya, cover, and cook for about 5 minutes until the pepper is limp.
