- In a large skillet, cook bacon over medium heat until crisp, about 10 minutes.
- Reserve fat in the pan, drain bacon on paper towel, crumble and set aside.
- Coarsely chop the onion.
- Add onion and rice to the pan and cook, stirring often, for 2 minutes.
- Increase heat to medium-high and add tomatoes and their juice, chicken broth, thyme, black pepper, and bay leaf.
- Bring mixture to a boil, breaking up the tomatoes with a spoon.
- Reduce heat to medium-low, cover the pan, and simmer for 15 minutes.
- Cube the cooked turkey and lean ham.
- Cut the red bell pepper into thin slivers.
- Stir turkey, ham, and bell pepper into the jambalaya, cover, and cook for about 5 minutes until the pepper is limp.
