Ingredients

  • 1 lb navy beans
  • 1/2 cup onions, chopped
  • 1 meaty ham bone
  • 3 cups water
  • salt to taste

Instructions

  1. Soak navy beans in water to cover overnight.
  2. Rinse the soaked beans and put them into a crock-pot or other pan along with the ham bone and chopped onions.
  3. Optionally, add chopped celery and carrots for extra flavor.
  4. Simmer covered in a crock-pot on medium for 6 to 8 hours, or cook on the stove for a shorter time until beans are soft.
  5. Serve hot, garnished with chopped raw onions and accompanied by cornbread.
