Ingredients

  • 1 lb. ground smoked ham
  • 1/2 lb. ground lean pork
  • 1 1/2 c. soft fine bread crumbs
  • 1 well beaten egg
  • 1/2 tsp. dry mustard
  • 1/4 c. brown sugar
  • 1 tsp. prepared mustard

Instructions

  1. Combine ground smoked ham, ground lean pork, soft fine bread crumbs, beaten egg, and dry mustard in a bowl.
  2. Fill medium size muffin pans with the mixture, rounding the tops in a meatloaf fashion.
  3. In a separate bowl, combine brown sugar and prepared mustard, then spread the mixture over the tops of the cups.
  4. Bake at 325°F for 1 hour.
