Ingredients

  • 1 lb. sliced ham, cut in 1/2-inch cubes
  • 1 Tbsp. butter
  • 1 medium green pepper, chopped
  • 1 clove garlic, minced
  • 1 (No. 2) can tomatoes
  • 1 c. meat stock or bouillon
  • 1 c. rice
  • chopped parsley
  • 1 medium onion, chopped
  • 1/8 tsp. Tabasco

Instructions

  1. In a heavy pan, brown the sliced ham lightly in butter.
  2. Add chopped onion, green pepper, and minced garlic; cook for 5 minutes.
  3. Stir in canned tomatoes, Tabasco, water, and rice.
  4. Cover tightly and simmer for 30 minutes or until rice is done.
  5. Lift with a fork occasionally; do not stir during cooking.
  6. Serve garnished with chopped parsley, if desired.
