Ingredients

  • 1 1/2 lb. ground smoked ham
  • 3/4 lb. ground fresh pork
  • 1/4 tsp. pepper
  • 1 1/4 cups cracker crumbs
  • 2 eggs
  • 3/4 cup pineapple juice
  • 3 Tbsp. minced onion
  • 6 slices canned pineapple

Instructions

  1. Mix thoroughly the ham, pork, pepper, cracker crumbs, eggs, pineapple juice, and onion.
  2. Arrange 2 slices of pineapple along each side of a greased Pyrex loaf pan.
  3. Put the ham mixture into the loaf pan, pressing against the pineapple slices to hold them in place.
  4. Cut the remaining pineapple slices into fifths and place on top of the ham loaf.
  5. Bake at 350°F (175°C) for 1 1/4 hours.
