Ingredients

  • 4 medium potatoes
  • 2 Tbsp. butter
  • 1/4 cup chopped onion
  • 2 cups water
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. paprika
  • 3 Tbsp. flour
  • 2 cups milk
  • 1 small can corn
  • 2 cups diced ham

Instructions

  1. Peel and dice the potatoes.
  2. In a large saucepan, melt the butter.
  3. Add the chopped onion and cook until tender.
  4. Add the diced potatoes, water, salt, pepper, and paprika. Cover and simmer until potatoes are tender.
  5. Make a paste of the flour and 1/2 cup water; add to the potato mixture.
  6. Add the milk and cook until slightly thickened.
  7. Stir in the undrained corn and diced ham.
  8. Heat through and serve.
