Ingredients

  • 1 cup cut-up ham
  • 3 tablespoons fat (bacon dripping, ham fat, or other)
  • 1/4 cup flour
  • 2 1/2 cups milk
  • 1/4 teaspoon mustard
  • 1/2 teaspoon salt
  • celery (to taste)
  • 4 hard-boiled eggs, cut into fourths
  • hot biscuits

Instructions

  1. Brown the ham slightly in the fat.
  2. Cook the ham well if it is uncooked.
  3. Stir in the flour and add the milk.
  4. Cook and stir until thickened.
  5. Stir in mustard, salt, and celery salt; add the eggs.
  6. Heat just until hot, stirring to prevent sticking.
  7. Serve over hot split biscuits.
