Ingredients

  • 12 stalks asparagus
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. flour
  • 1 c. milk
  • 2 egg yolks
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 4 slices boiled ham
  • 1/4 c. grated cheese

Instructions

  1. Cook fresh asparagus in boiling salted water in a 1-quart casserole dish until tender, about 9 to 10 minutes.
  2. If using canned asparagus, skip to the next step.
  3. Melt butter in a 1-quart casserole dish; stir in flour.
  4. Add milk and cook until the sauce thickens, stirring every 30 seconds.
  5. Beat egg yolks and stir into the sauce.
  6. Add salt and dry mustard to season the sauce.
  7. Wrap 3 stalks of cooked asparagus in each slice of boiled ham.
  8. Lay the ham bundles in a glass utility dish and cover with the cheese sauce.
  9. Sprinkle grated cheese over the top.
  10. Cover and microwave for 4 1/2 minutes.
  11. Serve the ham wraparounds on toast.
