Ingredients

  • 1 lb lean ground beef
  • 1 Tbsp butter
  • 2 packages chopped frozen spinach
  • 2 cups milk
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp nutmeg
  • 2 Tbsp cornstarch
  • 1/4 cup water

Instructions

  1. Brown the ground beef in butter in a large pot.
  2. Add the frozen chopped spinach and cook until thoroughly defrosted.
  3. Do not cover the pot while cooking.
  4. Stir in the milk and bring to a simmer.
  5. Add salt, pepper, and nutmeg, and simmer for 5 minutes.
  6. In a small bowl, mix the cornstarch and water thoroughly.
  7. Very slowly, add the cornstarch mixture to the spinach-meat mixture, stirring constantly.
  8. Cook until the soup thickens.
  9. Serve hot, optionally garnished with a dash of nutmeg.
