Ingredients

  • 1 1/2 lb. ground beef
  • 3 (16 oz.) cans kidney beans
  • 1 quart tomato puree
  • salt and pepper
  • 3 quarts water
  • 2 small onions
  • 1 tsp. sugar
  • 1 tsp. vinegar
  • 1/3 can chili powder

Instructions

  1. Saute chopped onions in a small amount of olive oil until translucent.
  2. Add ground beef to the onions and cook until browned.
  3. If using dried beans, cook them in water in a large pot for about 30 minutes.
  4. Add the beef mixture to a large pot with 3 quarts of water.
  5. Add the tomato puree, sugar, vinegar, and kidney beans to the pot.
  6. Cook for 1.5 hours if using dried beans, or cook for 30 minutes, then add canned beans and cook another 30 minutes.
  7. Skim off any grease from the surface of the chili.
  8. Thicken the chili with flour as needed.
  9. Serve hot.
