Ingredients

  • 1 large zucchini
  • 1 lb hamburger
  • 1 cup minced onion
  • 1/2 cup minced green and/or red pepper
  • 1 egg
  • 1/2 cup cracker crumbs
  • 1/2 cup Parmesan cheese
  • 1 can (15 oz) tomato sauce
  • salt

Instructions

  1. Cut the zucchini in half lengthwise and scoop out the seeds and pulp, leaving the shells intact.
  2. Brown the hamburger, minced onion, and green or red pepper in a skillet.
  3. Add the zucchini pulp to the meat mixture, cover, and cook until the squash is soft.
  4. Season with salt, pepper, and garlic salt.
  5. Remove from heat and stir in the beaten egg, cracker crumbs, half of the Parmesan cheese, and enough tomato sauce to moisten the mixture.
  6. Season the zucchini shells with salt and pepper.
  7. Place the shells in a shallow baking pan and spoon the filling into each half.
  8. Spoon a small amount of tomato sauce on top of each stuffed zucchini and pour the remaining sauce around the halves.
  9. Cover with foil and bake at 350°F for 40 to 45 minutes.
  10. Remove the foil, sprinkle with the remaining Parmesan cheese, and bake uncovered for an additional 15 minutes or until the squash is tender and the top is toasted.
