Ingredients

  • 1/2 cup sugar
  • 1/2 cup margarine
  • 1/4 cup honey
  • 1 teaspoon vanilla
  • 3 large eggs
  • 1 1/2 cups whole wheat pastry flour
  • 2 1/2 cups unbleached white flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • dash of salt
  • 1/2 teaspoon baking soda

Instructions

  1. Beat sugar with margarine until light and fluffy.
  2. Blend in honey, vanilla, and eggs.
  3. In a small bowl, mix whole wheat pastry flour, unbleached white flour, baking powder, cinnamon, salt, and baking soda.
  4. Add to honey mixture and stir until well blended.
  5. Chill the dough for at least 3 hours or overnight.
  6. Preheat oven to 350°F (175°C).
  7. Roll out dough on a well-floured surface.
  8. Cut into 2 1/2-inch circles.
  9. Place 2 teaspoons of filling in the center of each circle.
  10. Fold three sides toward the center and pinch the edges together to form a triangle.
  11. Bake on a greased cookie sheet for about 15 minutes or until lightly browned.
