Harriett's Broccoli Cornbread combines tender broccoli, creamy cottage cheese, and flavorful cornbread for a hearty, cheesy side perfect for family dinners and gatherings.

Ingredients

  • 2 sticks margarine
  • 4 eggs
  • 10 oz chopped broccoli
  • 1 medium onion
  • 8 oz cottage cheese
  • 2 boxes Jiffy cornbread mix

Instructions

  1. Preheat oven to 375°F.
  2. Melt margarine in a 9 x 13-inch pan and set aside.
  3. Mix cornbread mix, eggs, broccoli, onion, and cottage cheese until well combined.
  4. Pour the mixture into the pan of melted butter.
  5. Spoon the remaining melted margarine all over the top of the mixture.
  6. Bake for approximately 30 to 40 minutes, until golden brown.
