Ingredients

  • 3 cups sugar
  • 3/4 cup shortening
  • 4 eggs
  • 2 cups mashed, cooked yams
  • 1 (6 oz) can frozen orange juice concentrate, thawed
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground cloves
  • 1 1/2 teaspoons salt
  • 1 cup chopped pecans

Instructions

  1. Combine sugar, shortening, and eggs in a mixer bowl.
  2. Beat until smooth.
  3. Add mashed yams and orange juice concentrate; mix well.
  4. In a separate bowl, mix flour, baking soda, cinnamon, nutmeg, allspice, cloves, and salt.
  5. Gradually add the dry ingredients to the batter, 1/3 at a time, mixing well after each addition.
  6. Stir in chopped pecans.
  7. Spoon the batter into 4 greased and floured coffee cans.
  8. Bake at 350°F (175°C) for 40 to 45 minutes or until loaves test done.
  9. Remove from oven and transfer to wire racks to cool.
